How does this work?

  1. A deposit reserves your order.

  2. Before harvest, I contact you regarding the cut sheet.

  3. I work with the butcher and deliver your order to our farm store freezer.

  4. You pick up your meat and pay the balance due. Short and sweet!

What is hanging weight?

  • The weight of the carcass hanging at the butcher shop after slaughter, but before trim and cutting.

  • The weight (and the amount of meat you receive) will vary slightly depending on the size of the animal.

  • Prices are based on the hanging weight and include processing costs of $1.05/pound. Cutting and packing is done by the wonderful team at Schrader Farms Meat Market.

What is the cut sheet?

  • Instructions for how to cut your order. Flat Iron Steaks or Chuck Roasts? It’s all on the cut sheet.

  • You can be as hands-on or hands-off as you want. I take care of the sheet for most customers given my recommendations.

  • Or you complete the sheet yourself.

  • Or you make specific requests, and we can discuss the sheet together.

When will my meat be ready?

  • We finish our cows in the summer when energy is highest in the grass. Orders will be ready for pick up in July and August.
